1 pound chicken tenders or breast, cut up

3 tablespoons BBQ seasoning, divided

°1/2 cup BBQ sauce

3-4 medium potatoes, cut into small pieces

°1 cup cheddar cheese, shredded

°1/2 cup cooked and shredded bacon

1 tablespoon extra virgin olive oil

°2 finely chop green onions

Follow these steps:

Preheat the oven to 475 degrees Fahrenheit.

Drizzle diced potatoes with extra virgin olive oil and 1 tablespoon barbecue seasoning. Place the potatoes in a baking dish coated with cooking spray.

Baking potatoes for 45-50 minutes, stirring every 10-15 minutes until fully cooked through and crispy and brown on the outside.

Once the potatoes are fully cooked, remove them from the oven and reduce the oven temperature to 400 degrees Fahrenheit. Garnish the cooked potatoes with the roasted chicken mixture. Bake for another 25 minutes, stirring occasionally.

In a separate bowl, combine the cheese, bacon, and green onions. Sprinkle the cheese mixture over the chicken. Return the casserole to the oven and bake for 5-10 minutes, or until the cheese mixture is completely melted.
